Loaded Pita Omelet Recipe

 

These veggie-packed omelets are great for an on-the-go lunch or dinner. Use our Daily Eggs and get and extra boost of Omega-3 DHA!


INGREDIENTS:

  • 4 eggs

  • 2 pita breads

  • 1/2 cup sliced peppers

  • 1/2 cup sliced onion 

  • 1/2 cup sliced squash 

  • 1/4 cup feta cheese (plain or garlic and herb) 

  • 1 tablespoon olive oil

  • 1/2 teaspoon minced garlic 

  • 1/2 teaspoon fresh chopped parsley (optional)

  • Salt

  • Oregano

  • Cumin


INSTRUCTIONS:

1. Lightly toast the pita breads and set aside.

2. Add olive oil to a non-stick pan over medium heat. 

3. Add peppers, onion, squash and garlic to the pan and mix together. 



4. Add a large pinch of salt, cumin and oregano, and saute until al dente (approx. four minutes).

5. Add mixed eggs to the vegetables and lightly scramble together.



6. Remove from heat and add feta cheese and parsley. 

7. Fill the two pitas with egg scramble and enjoy hot!
